Time with my boys

This morning started bright and early with a long run. I woke up around 6:15 and couldn’t go back to sleep, so I figured I would get started!

I felt great the whole run – didn’t feel like I was running too fast and wearing myself out. The last mile a runner ran past me and I was able to keep pace behind him for the rest of my run. Nothing like another runner to give you motivation to finish strong!

The rest of the day was spent with my little kiddos. I am trying to spend as much quality time as possible with them before our trip next week. We spent the day playing with friends, hanging out at home, and spending lots of time in the backyard.

I did manage to make a yummy, addicting snack – granola!

It is sweet and salty! I used 1/4 cup of coconut oil, 1/3 cup of shredded coconut, 1/2 cup of cranberries, 1/2 cup of oats, 1/4 cup of almonds, a pinch of salt, and 1/4 cup of maple syrup. I baked it at 250 for 45 minutes. It is soooo tasty! I couldn’t stop going back for more and gave myself a little sugar buzz. I can’t wait to have some with yogurt in the morning.

I also made another batch of almond butter! This time I used almonds, almond oil, salt, and a little honey. I can’t tell you how easy it is to make – it tastes amazing and costs less than what you can buy in the store. Almond butter make me happy and I love that I can always keep it in my house!
